The pouring ganache method is so easy once you get the hang of it , and honestly, so satisfying! You can cover your cake in no time; in this video, it took me just one minute to crumb coat this cake.

Credit to Stephanie the queen of ganache, @onecakestreet , with whom I had the pleasure of a wonderful 1-2-1 ganache class. The goal was to help me speed up my ganaching time, a technique she’s truly mastered.

As a sugar flower artist, I usually work with gum paste, but for certain blooms, wafer paper just brings them to life in a different way.

Ranunculus is one of those flowers. There’s something about the delicacy and looseness of its petals that wafer paper captures so effortlessly. So soft, airy, and real, it’s hard to believe they’re not fresh.
